#food should never go to waste. Used left over eggplants, carrots, tomatos from previous Airbnb tenants and improvised a #rice #Biryani with #IndianSpices I have been carrying since NEW ZEALAND trip

Biryani ( Urdu : بریانی; Hindi : बिरयानी, Biryani ) is a hearty rice dish from Asia. The name comes from the Persian word biryani Berya  (بریان) and means “fried”, “roasted”. To prepare an original Biryani is rice, traditionally in ghee , fried, which gives it a nutty flavor. Then the rice is cooked with spices in the water until it is cooked about halfway. Furthermore, meat, preferably goat, marinated, originally in yogurt, papaya and various spices, and possibly pre-cooked. The rice and the meat are transferred in layers in a pot (ceramic or cast iron), starting with a layer of rice and completed. Optionally, other ingredients, vegetables and spices can be incorporated. The pot is covered and heated on the hotplate until the Biryani can be served.
